Today is Friday, and let me tell you, it is going to be a crazy weekend. I am under a month to finish Rouxbe and the dessert class. Lots of time in the kitchen, cooking everything from raw cuisine to international to muffins and a chocolate ganache cake. All will be plant based and looks like the Ginger will have lots of things to munch on. I am just praying that I can get it all done before the due date and in time for my shindigs at the end of the month.
Below, I have provided a white bean chili recipe for you to try. Even though, it is in the 70’s here today, it is still winter and winter is the perfect time for chili.
White Bean Chili:
4 (1 lb) cans great Northern Beans, drained (for more variety, you could use 2 cans of northern beans and 2 cans of cannelllini beans)
3 cans vegetable broth
1 cup water
1 1/4 c. onion, chopped
2 cloves garlic, minced
1/2 tsp. salt
1 (4oz) can chopped green chilies or can you use one jalapeno minced.
1 1/2 tsp. cumin
1tsp. dried oregano
1/4 tsp. ground red pepper
1/4 tsp ground cloves
1. Place all ingredients in large (5 quart) heavy pot.
2. Bring to a boil, reduce heat, and simmer at least 30 min.
3. Spoon into a bowl. Garnish with chives and enjoy
Make sure that you take some time to just sit and reflect this weekend. Take a hot bath, read a book, get outside and just walk. Take some time to just be.
