I do not know about where you are, but so far, minus the one ice storm we had a few weeks ago, we have had a very mild winter and while I love smoothies and eat/drink them more days then not, I don’t love them as much when it is under 40 degrees. This mild winter means that I am dreaming of spring..the sun, the birds chirping and new growth. And spring and summer are perfect for smoothies. This smoothie has plenty of protein and fiber, plus it tastes great.
Strawberry Blueberry Oatmeal Smoothie
1 cup unsweetened almond or soy milk
1/3 cup uncooked rolled or steel cut oats
1 cup of fresh or frozen strawberries
1/4 cup of fresh or frozen blueberries
1/2 teaspoon pure vanilla extract (optional)
1 handful of raw almonds (also optional but it adds a more protein)
1. In a blender, combine almond or soy milk, oats, blueberries, strawberries and almonds and vanilla if using the same and blend until smooth. 2. Pour into glasses and enjoy.
