Monday. Usually a word that causes us adults to cringe. It signals that the work week is upon us. We get back to grind and usually that means a busy week is upon us. Hopefully, you woke up feeling refreshed and renewed.
I have decided that instead of viewing Mondays with dread, that they are going to be called Manifesting Monday. Each Monday, I will set a new intention or focus for the week. This could be something as simple as increase my water intake for the week or a little more complex, like journaling for 5 days. Either way, I am choosing to change my outlook and how I view Mondays and I challenge you to do the same. I will have and express more gratitude for all that has and is being provided for me.
But can I share a little bit of honesty? Ok, lean in, lean in close. Even if it is manifesting Monday, sometimes we need a little comfort food, which can be a little challenging on the Daniel Fast. You can eat any fried foods, but you can have baked fries. Homemade and preservative free, plus you can change up the spices to your fancy. Below, is my simple baked potato fries recipe.
Simple Baked Potato Fries recipe
1/2 pound small baking potatoes
1 tsp extra-virgin olive oil
1/4 tsp dried thyme
1/4 tsp dried rosemary
1/8 tsp salt
dash freshly ground black pepper
Preheat the oven to 425°F.
Cut each potato in half crosswise. Place the halves cut side down on the cutting board and cut each into 4 wedges. Place the potatoes in a bowl.
In a cup, mix the oil, thyme, rosemary, salt, and pepper. Pour over the potato wedges and toss to mix well. Spread the potatoes out on a baking sheet.
Bake, stirring 2 or 3 times, until tender and lightly browned, about 35 minutes. Serve hot.
This will serve 2, but you can easily double the recipe. Change it up and try some different spices or use sweet potatoes.
