We have done it!! We have made it to Day 11 of 21 days of prayer and fasting. We are beginning the final stretch. Hopefully your eyes have been opened to new insights during this time. Maybe you are even seeing some prayers answered. Regardless, of what has happened these last 11 days, maybe you have even experienced more attacks from the enemy as you have been humbling yourself and seeking the Lord, remember, that the Lord is your right hand and we will not be shaken. Continue to praise him through the storm, through the waiting, through the unknown and watch what unfolds. He will show up, it may not be in the way that you prayed for or imagined, but God is always working for your good. You have done good, now, keep it going.
Today’s recipe is short and sweet. We are making a date fruit paste. This fruit paste could be used on top of your morning oatmeal, to sweeten smoothies or to eat on a rice cracker with raw fresh ground almond butter, like a peanut butter and jelly sandwich. You can use any fruit to make this paste, but dates lend themselves quite well as they are a natural sweetener that will not raise your blood sugar, are diabetic friendly and are fairly neutral or mild in flavor.
1/2 cup dried unsulfured pitted dates (the ingredients should literally be dried dates, no additives, watch because some use sulfer or other preservatives and will have added sugars)
1 cup of water (or as needed) *this is for the blending, not for the soaking
1 vanilla bean (optional)
If necessary, pit the fruit. Place the fruit in a small bowl and cover with filtered water. Soak the dried fruit for 1 to 2 hours or until quite soft. If the dates are a little older, it could take as much as 4 hours to get them soft or you could always soak them overnight. Once the dates are soft, drain and add them to a high speed blender. Add about 1/4 cup of water, add the vanilla bean and blend until smooth. Add water as needed for the desired consistency.
The mixture will keep for over a week, covered and refrigerated or can be frozen for several months. It will not freeze solid which facilities scooping out exact amounts.
Note: You can change the flavor profile, add a pinch of ground spice, such as cinnamon or nutmeg, or sea salt with a bit of fresh juice.
