Today we are grateful. It is Mother’s Day and both of our mothers are still with us and both sets of parents are still married. Needless to say our mother’s have been through a lot over the years. They have seen life and death, hugs and tears. They have cooked and cleaned. They have taken care of the household, made sure that we made it to school, did homework, cleaned scraped knees and encouraged us when we needed it the most. They taught us to love, to give, to pray and to pursue. They instilled in us, a love for cooking. So what better way to say thanks Mom – then to provide you with one of our favorite recipes, Guacamole.
Now, I know what you are thinking, it’s guacamole, it’s easy, just through everything into a bowl and combine. And while it is easy and it is something that anyone can make, we make it with a little twist. Avocados are extremely good for you. They have good fat. They have potassium and important antioxidants. They are versatile. Avocados can be used in anything from desserts to smoothies to dressings to main dishes and more. I think it is safe to say, I am a little obsessed, but believe it or not, I did not always like guacamole or avocados. It wasn’t until I started adding them to my smoothies – did my feelings and taste buds about them change. In fact, I read that it takes 21 times, 21 times!! of eating a new food for you to like something that you otherwise did not. (Still working on changing my opinion on mushrooms and I have had those way more then 21 times, so it does not always work)
Alright, I believe I am digressing a little. Here is my (Angie’s) take on guacamole. This recipe can easily be doubled or tripled, etc.
You will need:
Two avocados, cut in half, seeds removed and scraped out and placed into a bowl
Cilantro – a half bunch, washed, de-stemmed and chopped fine
One jalapeno pepper -cut in half, seeds removed, and minced. When i made this in the above photo, I actually used like 5-8 pickled jalapeno pieces. and note – If you like your guacamole spicer, you can leave the seeds in.
One tomato, washed and diced or 1/4 of salsa of your choice
half of a red onion – diced
half of lime juice
1-2 teaspoons of bragg’s amino acids or coconut aminos
1/8-1/4 teaspoon of crushed red pepper -use 1/4 if you like more of a kick
1/8 teaspoon of ground cumin
1/8 teaspoon of smoked paprika
1 teaspoon of minced garlic or 2-3 cloves of minced garlic
black pepper to taste
Add all of the ingredients into the bowl with your avocados and mix using a fork or spoon, mix until well combined. I personally like chunky guacamole, but you can continue mixing until it is the consistency that suits you. I do not add salt to my guacamole, I use the Bragg’s, which gives it a salty smoky flavor.
This guacamole is perfect on chips, salad, veggies or I will sometimes eat it on its own. Enjoy!
Now, to our mom’s, we love you. We are so blessed and grateful that we have you in our lives. Thank you for all that you do. Our words will never be enough to express our appreciation of you.
