If you have been participating in the Daniel Fast with me, you are now on Day 4. Congratulations! Hopefully your body is almost finished detoxing and if you have been feeling fatigued and/or having headaches, rejoice, it does pass and then you will have even more energy then you did prior to the fast.
Today’s recipe is a yummy soup. Soups are actually very comforting foods and very filling. Dare I say, they warm you from the heart and soul and from the inside out, which is actually a good thing. This soup is really easy to make, is super yummy and will make enough for leftovers.
Creamy Cauliflower and Potato Soup
Ingredients:
1 onion thinly sliced
1 head of cauliflower, medium rough chop
1 bag of fingerling potatoes or 4 lbs of potatoes, medium diced
1 tablespoon minced garlic
4 cups of veggie stock
2 sprigs of rosemary
1 bay leaf
1 tablespoon of bragg’s amino acids (optional, can use salt in place of bragg’s, but go lighter on the salt) the bragg’s aminos will add a slight smoky flavor to the dish that salt does not. You could also substitute coconut aminos
pepper to taste
Directions:
Place onion to a stock pot with about a tablespoon of sesame oil, or your oil of choice, medium heat, add a dash of bragg’s amino acids, simmer until tender. Once tender, add the garlic, stir for another minute. Next add in the potatoes and cauliflower and cover with the 4 cups of veggie stock, stir to blend. The potatoes and cauliflower should be covered in stock, if need be add another cup of stock or water. Then add your 2 sprigs of rosemary, pepper, bay leaf and tablespoon of bragg’s amino acids.
Cook for 20-30 minutes until potatoes and cauliflower are fork tender, on medium heat/simmer. Once fork tender, remove the bay leaf and rosemary. Use an another immersion blender or high speed blender (if using a high speed blender, add solids, you may need to do this in batches, add a tad of stock and blend until creamy) Blend the soup until creamy. Add back to the pot and mix well. Place in bowls, garnish and serve. Possible good garnishes are dill and truffle oil, coconut bacon, chives or sundried tomatoes
