Yippee!! Today launches are new monthly book club reading and while I know we do not have a ton of time left in the month, I chose a very short book to read together. Currently, I am reading a book by Stephen Guise, Mini Habits – Smaller Habits, Bigger Results. You can buy the book in the link provided below, the kindle book is currently $5.99 or you can check and see if you local library has the book that you can borrow. (*note this is not an affiliate link, I make no money off of you buying this item) This is a really quick read and what I liked about this book is it is about taking baby steps, that one small step to make a positive change, which leads to even bigger steps which results in more positive outcomes.
And while we are talking about reading a book, if you are like me, I can always use a good snack while I am off in my literary bubble. Summer time. Sun, fun and afternoon showers. Honestly, it is hard to believe that we are already in July. Time really has been flying by and how I have missed writing, sharing and creating recipes.
Which brings us to the question – what have we been up to?
Well for starters, we have a new look to our website! and the new store is in the works, along with a logo that I can not wait to show you. We have done a few festivals with lots of success because of you! We premiered our Brown Sugar Chipotle Walnuts and now offer two different variations of them.
But most importantly – Thank you very much for the love and support. We can not exist or be a success without you! And know that out of every purchase made, at least 10% is donated to charities on your behalf. We will be highlighting these charities soon.
Other then that, recuperation took place. More specifically, the house is finally clean. It was a late spring clean, early summer, but the house has been scrubbed from top to bottom. We let go of items that no longer served us. Everything has it’s place and a place for everything. It feels so good and like a weight has been lifted off my shoulders.
Which means – that we are back to blogging, creating and writing while I continue to work behind the scenes getting the website to where I really want it to be and the store up and running. I look forward to this journey that we are going to continue on together.
So thanks for your patience and support over the last few months. It has been a crazy ride and I can not wait to see what is next.

We had an amazing time at the Mt Laurel Festival this past weekend. We meet some really cool people and it was a gorgeous day. It was actually a gorgeous weekend. Our hearts our full of appreciation and gratitude for all the support. Thank you. We sold out of some items and debuted our brown sugar chipotle walnuts, which were a hit. It was also really nice to be able to hang out with the Ginger for the day. We even went out to eat at an inexpensive restaurant. It was really nice and much needed as we have not had a lot of time together recently due to our work schedules. Spending quality time together is one of the key foundations of any relationship. A pinched nerve in my neck. Yup, on the right side. It hurts from the side of my head, to the base of the skull and down into the right shoulder. Not sure how I did it, but I am recovering from the same. This week I have had a deep tissue/trigger point massage and a nice visit to the Chiropractor and ice, plenty of ice. Ice helps reduce swelling and inflammation. Plus it feels good.

Spring has officially sprung! We had a fairly mild yet rainy winter, but if you are like me you are ready to get out in the sunshine and enjoy the great outdoors. I know that I am a little stir crazy and so this week, that is what I did. I took a day and went to Oak Mountain State Park. I love this park. It has trails, a “beach”, archery, waterfalls, golf course (for those that golf) and more. I used to go here 3-4 days a week, but because life happens, it is hard to do that right now. It is by far my favorite place to disconnect, regroup and refocus and Tuesday was a perfect day to do it. It was a gorgeous day and it was perfect for a 4 mile trail run and then some reading and just soaking up the sun.
One of the joys of being married is being able to cook for the Ginger. Currently, he has been working two jobs to bring in some extra money. That means that I get to create him dishes for dinner. This one is totally for the Ginger. 🙂 But it is paleo friendly, gluten friendly and depending on the oil used – dairy free. He really enjoyed it and it made enough for multiple meals which is a plus. I did pair it with mashed cauliflower and peas.
Artichoke Mushroom Braised Chicken
3-4 boneless chicken breasts
1 8 oz can of marinated artichokes drained
2 – 4oz cans of mushrooms drained
1 tablespoon of capers (optional)
1/2 medium onion diced
3/4 cup of chicken or vegetable broth
1 1/2 tablespoon apple cider vinegar
1 tablespoon coconut flour (or all-purpose flour)
1 teaspoon honey or agave
6 tablespoons of ghee, vegan butter or sesame oil
1-2 teaspoons salt
1/2 teaspoon fresh cracked black pepper

It is amazing what can happen in a week. Right now, I am patiently awaiting the final grades of the Vegan Dessert class that I took. That’s right…I AM FINISHED!!! happy dancing 🙂 happy dancing 🙂 It has been a wonderful experience and in the future, I will be sharing some of what I learned. It has been an intense 7 months in the kitchen, taking photos and class work, but I am ready for a bit of a breather and a chance to write, create and cook what I want to write, create and cook. But now, it is time for me to get some sleep as the last week has been a lot of long hours and little sleep, but next time..a recipe is coming 🙂

Yup, the above quote sums it up nicely. It resonates with me. It calls to me. Deep down in the pit of my stomach, I feel it. I have a purpose and a dream. I am going confidently in the direction of my dreams. They were placed in my heart for a reason. I have wants and desires and I am not necessarily talking about monetary wants and desires. For example, I want and strive to be the best wife for my Ginger. This is a role that I have never been in before and to be honest, was not sure I ever would be. Just like anything new, it has been a growing process, especially if one has 1. never lived with anyone outside of your immediate family and 2. lived alone for years before we moved in together. But each day, I put my best self forward, not just for him, but really and truly it is more about me. I want to be my best self. I am a business owner and I want to see that business grow. I want to be able to pour some of my profit back into my community, locally and globally. I want to inspire and empower others. I want to help others dream and to take that next step forward, even if it is a baby step or maybe even what feels like a crawl. I want to whisper to my inner child…go, go confidently in the direction of your dreams and I want you to do this as well.
Previously, I have always taken pride in a job well done. In giving it my all in whatever I do. In being that go-getter. Taking on projects, other peoples requests, sometimes ignoring my own needs and desires for the sake of others, working for others and working long hours at multiple jobs, sometimes with little to no reward. I said yes to things, when i should of said no. I took on more responsibilities, when really, it was in my best interest to just take some down time, a day off or a day to go and relax and have fun. I did not listen to my inner voice…my dream. I kept that dream silent and quiet at times. I made excuses as to why. I am sure that you have said them to yourself before, “I don’t have enough time, money, not good enough, what if i fail” and more. Sometimes, I even listened to people close to me, I listened to their own doubts, and letting them influence my own dream. Quenching it. Dousing the flames to embers, but not extinguishing them. Deep down the fire, the desire, it has been there my entire life. A little rebel, pushing the buttons and being outside of the “box”. I know that I was and am born for greatness. My greatness. I may not know entirely what path or direction, that will take me, but I know that I know. And that dream is alive. It is stirring in me. I can no longer quench it. The time is mine to act. I trust the process. I trust that God will guide me, go before me and be with me on this journey. [Read more…] about Go Confidently
