Sometimes, it is the little reminders that you receive that let you know that God is working and he hears you. Over the last few days, I have prayed and I have practiced gratitude and being silent. Just waiting and listening. Listening for that little voice, that little sign, that I am on the right path. And he is answering and moving. I really did mean it when I said a few posts back that I am attempting to be more intentional this year and in each of my daily activities. With those daily activities, I need snacks! The Ginger can ALWAYS tell when I am in need of the food. I get a little ditzy and will stop mid-sentence a lot. He finds it as amusing as when I have conversations in my head, and then only give him one or two random thoughts on it. Which means, he really doesn’t. So, if you are like me and need a snack to stay on focus, check out this recipe for almond butter bites – enjoy!
Almond Butter Bites
½ cup almond butter (make sure that you get fresh ground, no added sugar or oil), If you do not have almond butter or can not buy any, you can take 1/2 cup of raw almonds and puree in a food processor until creamy
¼ cup raw sunflower seeds
¼ cup raisins
¼ cup chopped almonds
2 tablespoons unsweetened shredded coconut
¼ teaspoon cinnamon
Mix all ingredients in a bowl until well combined. Use a 1/2 tablespoon measuring spoon or a large melon ball scoop to form mixture into small balls. Place in a dish and freeze until firm or put in the refrigerator until chilled. Serve frozen, just slightly thawed, or straight from the refrigerator. Will keep for at least a week, if they last that long.
