wow….what a week it has been. The Ginger and I took a pretty spur of the moment road trip to pick up the Ginger’s new used vehicle. The decision was made within 24 hours of us heading out on a jet plan! The beauty of it, we got to fly into Salt Lake City, Utah and drive back to Home Sweet Home Alabama. It has been years since either of us have flown and this trip was very reminiscent of some of the crazy, but tame things I did while in college. It is so cool to be able to just pick up and go. I love this meal. Made it for dinner the other night and it is so versatile. This recipe is similar to an Udon bowl or a rice bowl, which would “traditionally” be Asian, but you can easily make it Mexican or Greek. In addition, this recipe was approved by the Ginger – when he says, he would do the whole meal again just like it was – it has to be good. Now, he is still a little unsure of quinoa, which I love because it is a complete protein and I love the slightly nutty flavor it naturally has. I keep the quinoa/rice mix simple and don’t add any spices while it cooks, but it could easily be tailored to fit your taste. So for this recipe we used a quinoa/rice blend, but it would work well with just plain quinoa or rice. It was enough for the two of us, with enough for leftovers for me for lunch the next day. If you want to feed, 4 people – double everything. This recipe is also fairly simple and has very little cook time/preparation. I cut all the veggies while the sweet potatoes and quinoa were cooking.
The last few weeks have been super crazy, between my day job, getting ready for the festival and being involved in small groups with church, it has been easy to get a little run down. Needless to say, it is a time of recuperation, relaxation and detoxing. I love hot espom salt baths with baking soda and adding peppermint and grapefruit essential oils. It is relaxing and boosts the immune system, while pulling the toxins out of the body. But still have to eat dinner this “down time” right? Hi all!! It has been crazy busy getting things ready for the festival in just a few hours, but I wanted to give you a quick look a one example of the items we are now selling:

Here is our sign that was used at the last festival that we did in December and it will be making a come back this weekend at Mt Laurel. T-minus 2 days! Trying to pull everything together and put it all into a nice, neat package. It can be tough!

Wow!! This real is going by really fast. Already in April. The Ginger and I are going to be at the Mt Laurel Spring Festival April 9th from 10-3.
